Spinach is high in iron, which we all need. The iron helps to prevent inflammation and the Vitamin B can nourish the pancreas. It is a very versatile vegetable. I put it in everything from salads to pasta dishes!

One of favorite ways to eat spinach is in a salad.
4 cups spinach (sometimes I do 1/2 spinach and 1/2 spring mix salad)
1 cup cranberries
1/2 cup slithered almonds
(If you need or want more protein, add grilled chicken or steak)
dressing
Just mix the ingredients and add your favorite dressing. Honey mustard dressing goes really well on this salad!
