Hello Whipple Warriors and anyone else who wants to eat well!
I have a recipe for roasted sweet potatoes. Did you know they are so good for the pancreas? (And the whole body) After my Whipple, finding food that did not upset my new system was difficult. One thing that has been easily digested for me are sweet potatoes. Before the surgery, I was not so crazy about these delectable bites. I preferred regular baked potatoes. As you know, things change after this procedure and for me my taste was one thing that changed for the better, I think. I hope you try this simple recipe!
4 cups washed and cubed sweet potatoes (I leave the skin on for better nutritional value)
I cube rather than the french fry cut, but it is your choice!
3 tablespoons extra virgin olive oil
Salt and pepper to your taste preference
Preheat oven to 425 degrees.
In a bowl mix the sweet potatoes, olive oil, salt and pepper. Coat the potatoes.
Place in shallow roasting pan and place in oven for 30-35 minutes. Turn the potatoes half-way through cooking time. If you like crunchier edges, leave a little longer. Cool and enjoy!
