Date Energy Balls
2 cups Medjool dates
2 cups walnuts
1 cup shredded unsweetened coconut
1/2 tsp salt
Put the walnuts in food processor and pulse till minced. Add the dates, vanilla and salt. Pulse till there is a uniform sticky batter. Don’t over pulse it! Take out of food processor and roll into balls then roll in coconut. Chill for 30 minutes and enjoy!
If you cannot tolerate the coconut, skip it!
