Kale is so good for you! It is high in Vitamin C and beta-carotene, which fight cancer! It is also high in kaempferol, a flavonoid that inhibits the growth of pancreatic cancer cells! So doubly good for us Whipple Warriors! I have found Kale very easy to grow in the climate here in Texas. It grows through the winter!
Roasted Kale Chips
Two cups Kale
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Preheat oven to 275 degrees
Chop the Kale into bite size pieces. Toss kale, olive oil, salt and pepper in a bowl.
Place kale on baking sheet. Bake for about 20 minutes, turning the kale after 10 minutes.
Note: It is easy to oversalt the kale, so a very light amount will work and if you need more you can always add it later!
